Stephen is very passionate about cooking. He has been a chef for more than 20 years, and he has cooked in restaurants across the United States. When Nikki wants Italian food or Japanese cuisine or Mexican, all she has to do is put in the request in the morning and after the proper shopping, Stephen creates some of the most delicious foods anyone could eat! He will sometimes spend several hours in the kitchen, creating stocks for elegant soups or stews. He has won prizes for his chili creations and whenever the weather is damp or cold, he will have the kitchen filled with the most amazing smells. You are ready for dinner all day long when he is creating a new menu! Nikki's passion is her animals. If she is not hiking in the woods with the dogs, she is out in the field with her horses, training them to ride or teaching them exercises so they will stay healthy and fit. Nikki will spend hours rehabilitating a bird that is injured or feeding a little mouse that has unfortunately found its way to one of the cats. She respects animals on a level that is very rare and animals seem to know it when they are around her. It will be a joy and an honor to teach a child all that we know about our passions in life.
The very first week we were dating, we talked about adoption as a possibility in our lives. We both believe strongly in adoption, as it has played a very significant role in the lives of our family. When Stephen's parents were very, very young, Stephen's mom became pregnant with their first child, Michael. Unsure of what to do, Stephen's parents put Michael up for adoption and then later married and had two more sons. For twenty years, they hunted for Michael but were unable to find him. Ten years ago, the phone rang and Michael said "Hello" to his birth mother for the first time. Michael's adoptive parents had passed away and Michael wanted to reconnect with his birth parents. It has been one of the biggest blessings in our lives to get to know Michael and to share our lives together. We both believe that it is very important for an adopted child to know where they come from. When they mature to a level of understanding adoption, we feel they should be given the opportunity to learn about their birth parents, should the birth parents permit it. All adopted children should understand that their adoption occurred because they were actually loved by their birth parents.
Stephen and Nikki met in the most unique way. They tell their story whenever anyone askes because it is so special. Nikki was training to become an EMT and she had to spend a few hours riding on the local ambulance to gain her license. She met Stephen,who was already a licensed EMT,and they chatted briefly for a few minutes until Stephen was called away on an emergency transfer. Months later, Nikki was working as a ski patroller for a local mountain and Stephen walked in the door, also employed at the same mountain, doing the same job. They were so surprised to see each other that Stephen asked Nikki out right on the spot. She agreed and as strange as it may sound, they were engaged one week later and married two months after that! They have now been married eight years and they laugh every time they talk about their courtship. Nikki remembers people asking her what her husband's favorite food was and she would say" I have no idea. I haven't known him long enough! I only know that I have been waiting for him my whole life and now he is finally here!"
